Here is a delicious breakfast idea that will add variety and an extra boost of protein to your morning. Crumbled tofu is cooked with bell pepper, onion and Mexicali spices, creating a quick and easy meal that is actually a great option for lunch and dinner too!
Enjoy this tofu scramble in whole wheat tortillas with refried beans and avocado- it is also equally delicious all on its own.
Ingredients:
1 (14-ounce) package extra-firm tofu, drained ½ cup salsa 2-3 Tbsp vegetable broth (plus more as needed for sautéing) ½ [...]

A cross between a muffin and a scone, these biscuits are just sweet enough and bursting with delicious blueberries. Enjoy these wholesome treats in the morning served with fresh fruit; packed in your lunch; or for an on-the-go snack.
Using flax meal as an egg replacer is a vegan baking tip I learned from The Joy of Vegan Baking by Colleen Patrick-Goudreau- I implemented this trick in the blueberry biscuit recipe. Because flaxseeds have a nutty flavor, this egg replacer works best in baked goods that are grainer and nuttier, such [...]

These are a healthy alternative to the highly processed granola bars you find at the grocery store. My kids love them packed in their lunch or for a quick on-the-go snack. They are also very versatile as you can stir in your favorite flavor combinations- coconut, walnuts and raisins is a favorite of mine but I also like to add nondairy semisweet chocolate chips for an extra sweet treat!
Preheat oven to 350 F
1 cup quick oats or old fashioned oats (toasted), (see note) ½ cup unsweetened shredded coconut (toasted), (optional) ½ chopped walnuts (toasted), (optional) [...]

Frozen fruit is the key to a successful smoothie–adding fiber, taste, and iciness to your morning beverage, not to mention a hefty dose of cancer-fighting compounds. Bananas help add thickness, producing the perfect “smoothie” consistency. Making smoothies is a fun way to start the day too–there is always a little helper by my side, my kids love to push the blender buttons and taste the results of their creations.
While there are many, many smoothie variations; this recipe never fails me (we always seem to have these ingredients on hand too). Feel free to play around with [...]

A steaming bowl of freshly cooked oatmeal is a great way to start your day; it’s hearty, satisfying and sure to provide the strength and energy you need to carry you through a hectic morning schedule. While oats are a rich source of dietary fiber and protein- the addition of mixed berries, ground flaxseeds and walnuts will also fuel your body with antioxidant phytonutrients, vitamin C, and Omega-3 Fatty Acids.
This recipe makes creamy, thick oatmeal; it has fresh and vibrant flavor from the mixed berries and rich texture from the ground flaxseeds and walnuts. [...]

These pancakes are a Saturday morning treat in our house. The first time I made this recipe my youngest son asked me if I could make it everyday. My oldest is not a fan of pure maple syrup, preferring Mrs. Butterworth on his flapjacks. After tasting this “buttery”, cinnamon-maple syrup, he raved about how yummy it was, even better than his old fave! Buckwheat and whole wheat flour add more fiber to these pancakes than the traditional variety while the pumpkin supplies an additional boost of nutrients and vitamins, making it a great way to start the [...]
