These cupcakes are a real treat if you’re craving something sweet. In this recipe a banana works as the binding ingredient (or “egg replacer”) but its flavor remains very subtle and does not overpower the delicious combination of chocolate and peanut butter. While bananas are fantastic “egg replacers” in baked goods, they aren’t necessarily a measure for measure replacement. In general consider half a mashed banana as a replacement for one or two eggs.
