Faux Flavor Flimflam
Ice Daughter and I ran across this 60 Minutes feature on flavorings, and she immediately clicked StumbleUpon to share it with the millions who find interesting content there. "The flavoring industry is the enabler of the processed food industry." True that. It's a lot easier to overeat on foods when they've been artificially salted and flavored to a higher level of desirability.

Meatless Monday: Chocolate Peanut Butter Cupcakes

By Heather Maxon Adapted from The Joy of Vegan Baking

These cupcakes are a real treat if you’re craving something sweet. In this recipe a banana works as the binding ingredient (or “egg replacer”) but its flavor remains very subtle and does not overpower the delicious combination of chocolate and peanut butter. While bananas are fantastic “egg replacers” in baked goods, they aren’t necessarily a measure for measure replacement. In general consider half a mashed banana as a replacement for one or two eggs. These decadent cupcakes are excellent topped with chocolate peanut butter frosting or you can frost them [...]

Meatless Monday: No-Bake Strawberry Pie with Chocolate Chunks

Adapted from the Joy of Vegan Baking By Heather Maxon

This is a delicious, easy-to-prepare pie from the Joy of Vegan Baking by Colleen Patrick-Goudreau, a comprehensive, educational, and exquisite resource that is sure to captivate vegans and non-vegans alike. Colleen’s book helped me rediscover baking after giving up dairy and continues to be an invaluable resource, it is my go-to guide for configuring fat, moisture, and leavening when creating my own vegan sweet treats.

Meatless Monday: Classic Chocolate Cookies

“While I advocate a whole foods plant-based diet, I’m not proposing that we all have to live an ascetic lifestyle, devoid of gustatory pleasures. What I do propose is that we treat desserts for what they are: treats!” – Colleen Patrick-Goudreau

Friday Recipe: PEANUT BUTTER CUPS!

I’ve made three batches of these chocolate peanut butter cups since I bought The Kind Diet by Alicia Silverstone. The store-bought ones taste a little too sweet and the chocolate is poor quality, but these little gems are, as Alicia says, the most ridiculously delicious things in the entire world.

Makes 12.

3/4 cup Naturally Nutty Peanut Butter 1/2 cup Earth Balance butter 3/4 cup graham cracker crumbs or 10 squares 1/4 cup maple sugar or other granulated sweetener

1 cup grain-sweetened, nondairy chocolate 1/4 cup soy, rice or nut milk 1/4 cup chopped pecans, almonds or peanuts

Line a [...]
