From VegKitchen.com By Nava Atlas

This is one of those simple, comforting dishes that are just as good for dinner as they are for brunch. Have potatoes cooked ahead of time and this easy and tasty dish will have your family eating in short order. Leftovers are wonderful for breakfast. Or, if you make this expressly to serve in the morning, you can either microwave or cook the potatoes the night before for a head start. Great accompaniments include Israeli Salad, orange slices, and fresh whole grain bread. Adapted from The Vegetarian Family Cookbook Serves: 4 to 6

4 to [...]

In this placebo-controlled five-year study, published Monday in The Archives of Internal Medicine, French researchers divided 2,501 men and women into four groups. These study participants were all survivors of heart attacks or strokes, ages ranging from 45 to 80. They were divided into four groups. The first took daily supplements of vitamin B9, vitamin B6 and vitamin B12; the second took two kinds of omega-3 fatty acids; the third took vitamin B6, vitamin B12 and omega-3; and the last took a placebo.

174 new cases of primary cancers were documented and pathologically confirmed among the participants.

After controlling for [...]

I hope that all of my dear readers are surrounded with pink and red roses, eating vegan chocolates, and wearing new jewelry while getting a foot rub by someone who is promising their undying love. Some of us will spend the night deep conditioning our hair and going to bed alone. It’s hard not to feel a little bitter about it.

Some of us have a person in our life who has treated us badly. We feel broken and unable to move forward in another relationship, stifled, suffocated, mired down. While forgiveness is a great idea, how does a person [...]

From VegKitchen.com By Nava Atlas This week’s recipe, by April Jones, a regular VegKitchen contributor, is one of those go-to recipes you can make even when you’re at the tail end of a wearisome day. It’s delicious with a big salad or coleslaw and baked sweet potatoes or, if time or patience aren’t an issue, sweet potato oven fries. Serves: 6

1 bell pepper, finely chopped 2 jalapeños, seeded and minced, optional 1 medium onion, finely chopped 2 garlic cloves, minced, or more to taste Two 15-ounce cans black beans, drained, rinsed, and lightly mashed 1 teaspoon cumin 1 [...]

The European Menopausal Society announced last month that widespread supplementation with Vitamin D is probably not beneficial to most women, unless they are suffering with bone loss or have a history of fracture.

The media reports non-skeletal benefits of taking supplemental Vitamin D include reduced risk of cardiovascular disease, diabetes, cancer and neurologic disorders. Long-term, prospective trials, where patients are treated with Vitamin D and outcomes are measured, have not been performed. Rather, these outcomes are relying on testimonials from individuals who experienced improvement with taking the supplements, rather than actual test subjects in controlled trials.

Also, different countries vary [...]

Though a small amount of non-dairy cheese is optional, this pizza truly doesn’t need it for flavor. Feeding a larger crowd? The recipe is easily doubled to make two pizzas. Take off on this idea to vary the pizza with other vegetables.

It’s annual exam time at Dr. Mary’s office, the middle winter, when all the locals come in for a long visit, mostly because there is only so much skiing a person can do. No one wants to find themselves trapped in my office in the fantastic sunshine of August for their annual exam. An interesting pattern is emerging among all the mammograms and pap smears. On annual review of medication lists, two of my patients have started supplementation with iodine. One of the patients developed new onset hypothyroidism since last year, and the other patient is asymptomatic. The new diagnosis [...]
